I've heard of this, but I guess I don't understand what the advantages are. Why do people remove the sear pin in E-mags? Is for increased rate of fire?

You can't remove the sear pin. A mag, emag included will not function without the sear pin.

I think you are refering to the trigger rod. People remove the trigger rod in the emag to prevent a reactive trigger which can be illegal in some tournaments if the reactivity (bounce) is too high.
