In a normal room temperature setting do paintballs go bad? Can I store a few cases of paint in my closet for a few months without worrying if it will get messed up?

It says right on the box to store paintballs in an environment with 50% relative humidity and between the temperatures of 59 to 86 degress F*. So, as long as you're within these limits, you should be ok. It is best to use the paint as quickly as possible, however.
As long as you keep it in your closet, and flip over the boxes every couple of weeks, paint can be stored for quite a long time.
I've had paint stored for 6 or more months, OUTSIDE in my shed, with no problems.
Heck, I've even got some good condition, original Nelson red fill from 1992 around somewhere!
