Im buying a PMI Pure Energy - Fixed N2 Tank - 72ci 3000psi...will the regular bottle adapter work w/ nitro?

you mean the part you screw the tank into?

yes, its the same for n2 and co2

Do you advise getting an on/off valve?

its preference really, i do love having my on/off, but then again i have max-flow, so i rarely take the tank off anyway.

you can also buy the smart parts on/off, its just an adapter so you can always take it off it you dont like it, i believe they run like $14
