Well...technically you dont "cap someone in the head"

The reason it's called "capping" is because the way the gun was held, you would aim for the kneecap, hence the name "capping".

When I was in high school cap also refered to the bullet itself, as in "i'm gonna put a cap in his....." The knee cap thing is true to, I heard that people would often do that to flee from police. It wouldn't kill them, avoiding a murder charge, but seriously slow them down and keep them off of work for quite a while.
