The other day I did a deal with someone and he ripped me off big, $750. What should I do first to try and get my money back?

Call the police in his home town if you cannot get your money or goods back from him.

First, how did you pay him? through pay-pal, money order, cheque?

I contacted some of the Ebay users that have sent him items, and got his address. I will be calling the police tomorrow, until then I wont disclose any more information. Thanks for the help you guys,
