All of the sudden my gun's velocity is jumping all over, i noticed the bolt spring is in really bad shape...would that have anything to do with velocity?

As long as the spring, while on the bolt, comes above the bolt nose it is okay.
This sounds more like your regulator seat is going south. Check it super close for debris, cracks, worn spots and if it still "snaps" into the reg.

if the pring is above the bolt, its good. like army said, check your reg seat. if it is dirty or scratched, it will cause irratic velocity.
