No. There's a reason why you'd want to have 3-preouts even if you didn't use one set.

How else can you adjust the volume of your fronts independently from your rears... independently from your sub... all from your HU?

Having a non-fading pre-out... is one of the issues. I guess there are some 2-preout HUs that let you switch rear pre-outs to non-fading... but... well... just get a 3-preout HU. It's not like you're spending much extra for a model that has it.

Can you do without a 3rd Pre-out? Yeah... you can if you really want to I guess. I actually had my old truck setup like that for a while...

Crutchfield actually has some cool free instructional install videos.

I'm still a little confused by this. By having a 3rd preout it lets me adjust my fronts/rears/subs independently?

Yes, sorta. Typically you control your rears using your FADER controls. You control your sub separately with the SUB volume control... or whatever it happens to be labeled. Without the 3rd preout... you don't have that separate control from the HU. You don't HAVE to have this... but I'd suggest going with it.
