quebec City isn't really a hot bed of paintball in quebec. The place to be is montreal but that's not where your going to be. Anyway check out this site:
It's a list of fields in Quebec. I know of 3 indoor fields in Quebec and all 3 are about 2.5Hrs to a 4 hr Drive away from you. You'll most likely want to just check the ones with 418 area codes that's the area code for quebec City and surrounding area.

Skyball Happens in Toronto, Ontario. It is roughly 1hr to 1.5 hrs away from Buffalo crossing at the Peace Bridge.Comment
