I WISH I could get a gas stove.....No gas here and can't put a tank due to covenants.

Foo, use a flat-bottom wok for the non-gas stoves. Mine gets nice and hot. That's why I have 2 woks, one classic, one flat-bottom.

(Still angry that my dad threw out his 20 year old wok when my parents moved)

My flat-bottom isn't seasoned perfectly all around, but it gets the job done. The only problem is my lack of skill.

Somewhere in the 500 degree range, good luck getting an oil to go with you to that range. Maybe clarified butter or one of the "baller" pure expeller presses of a soy oil. i dunno. i can understand that cooking on a wok can be hard, but they're not supposed to be used on a range.. there is a special gas "stove top" for woks. would you use a cardboard tube as the barrel on your paintball gun and then complain about its poor perfomance? no... right tools, right job... nuff said.
The real problem for me is that i need more heat to compensate for the uneven heating I tend to get with my wok. Keep in mind I live in a rental house with a crappy electric coil range that is for sure not flat. It makes cooking quite the pain because the hot spot moves around especially on my wok. (having a 'hot spot' on the wok is also a problem in itself IMO, the whole bottom should be evenly ULTRAFREAKINGHOT) That's why I said the cast iron skillet was easier.

again, I needs the heats (evenly) to make the foods (well).

and nip: all my flat bottom pans don't work on my coils because the coils aren't exactly flat.

/i should just buy new coils....
//i actually checked if they're flat and they are indeed warped

i like gas stoves the best, we had this crappy electric one in our dorm.

electric oven always burned my corn dogs, they were either burnt or under done, could never ever get them perfect, and the stove top was just horriable for cooking anything, electric sucks.

I have an 11", 8", and 5" cast iron skillets along with a 14" carbon steel wok. Just got them all recently and have only cooked using them a couple times. The skillets were easy to season and cook with, but that damn wok is a pain in the butt to get started... couldn't evenly heat it and I couldn't evenly coat it. Just made some fried rice and chicken. Down with non-stick coating!
wow, like 20 posts and no takers.
Can i have the cast iron skillets?

I only ever cook with a wok. I have other types of pans, but I find the wok the best for frying work. Im quite attached to my wok

                  Gas FTW btw
