I'm buying a racing seat, and was wondering how to determine what width you need it to be. I'm getting a Kirkey drag seat, and they are measured in increments from 14" to 20" at the hips, before a seat cover is installed (they're just pure aluminum buckets, the seat cover comes separate). How do you determine how wide you need the seat?

You can usually find a "typical" chart showing for what size a person is what size you probably need. Personally, if you are putting in the effort to get a custom seat, I'd find a place that has them (or similar ones) and sit in all of them to determine which one is right. A correctly fitted car seat will comfortly hold you, and it's really noticeable how little you will move in hard turns. The seat can make a difference in comfort, even if your purpose is as a daily driver.
