I would suggest that PBA might be the best choice for a first practice.
As to frequency, that will depend on a number of things:
1) Current skill level of the players
2) Required skill level of the players
3) Player's commitment to the team
4) The type and number of tournaments the team wants to play
Paintball is one of those sports that you need to be playing or practicing with a team to get any better (there's not a lot you can accomplish by yourself during the week, other than physical conditioning and perhaps some target drills).
For serious teams and high-level tourneys, once a week. If the team wants to play only local tourneys for a while, I would say start off with every other week for a couple of practices and see where we are.
