OK, a lot of this is known.
The character played by Jimmy Smits is Bail Organa - senator from Alderan. He will become Leia's adopted father and she gets the title "princess" on Alderan. No one knows she is Vader's until Luke figures it out (by which time Organa is dead). Leia always carries the name Organa (Leia Organa and later Leia Organa Solo when she becomes the head of the New Republic). We won't know how Padme and Bail Organa get to know each other well until Episode 3.
Vader knows about Luke and knows he is on Tatooine. He doesn't know Obi-Wan is there - basicly Obi-Wan hides in Luke's "Force shadow."
Yoda will kill Dooku on Degoba. His death will leave a dark-side Force imprint on Degoba (the place where Luke sees Vader) and Yoda will hide in that Force shadow.
There are a couple of other odd jedi types that will also hide in the shadow of violently killed jedi only to show up much later. The rest will die in the Clone wars when Vader betrays them.
Vader gets the way he is by being knocked into a blast furnace - burns much of his skin and his lungs away.
There is a trilogy (the Han Solo Trilogy) that describes where Han comes from, how he hooks up with Chewie, and how the Death Star plans get stolen and passed to Leia. These happen right before Episode 4 - they probably won't figure in Episode 3.
