    Yes, easily. A lot of open source balls will compile just fine without issue. While you can get just GCC and whatever for OSX, the full developer tools are free and include gcc and other goodies. The file system is usually HFS+, and uses unix permissions. Admin level users are added as sudoers.

    IMHO it's the best workstation version of unix avaliable right now. You do lose some compatibilty with some open source programs, but you get a lot of OSX software that's very cool. I think as the machines become all Intel, more and more source packages will compile without issue.
